So my hubby and I found a really great deal on eggplant not too long ago and decided to bake some as the first step to eggplant parm. Oven pre-heated. Cooking and baking supplies on-hand. Tummies eagerly preparing for the goodness to come. Shortly after we load the eggplant into the oven to bake, we hear a resounding KA-BLOOM!!
